Chillies are to Mexican salsas what grapes are to wine: the variety, terroir, the soil and sun they're grown in, and how they're dried all shape the flavour and heat of every spoonful.
In this one-hour talk and tasting, Alexa Fernandez of Chili Maven takes you through Mexico's essential chillies, from fresh to dried, and shows how they come together in its most celebrated dishes, including the moles made for Dia de Muertos.
